Rodrigo's Zapateado. Learning it now. Very challenging. Grade 10 in the Canadian RCM school. Had to work out every bit of RH fingering to make it work.

Baroque lute Gigues, espacially the ones written by bach and Weiss.

Gaspar Sanz' Canarios would be one. And almost anything by Antonio Lauro!
I'm currently rehearsing with a string quartet for a performance of Carlos Guastavino's Jeromita Linares, which is very lovely indeed. The slow central section is in 2/4, but the outer sections are 6/8 with lots of very latin syncopations, which confuse the poor quartet players who aren't used to that sort of thing. You'll find plenty of recordings on you tube, my favourite has Victor Villandangos on guitar.

Niccolo Paganini, Romance in A Minor from Grand Sonata for Guitar and Violin!

I'm just practising this piece in a wonderful version for solo guitar, edited by Karl Scheit.
It's an ABA'-form (Piú tosto largo. Amorosamente), very nice and romantic chords, beautiful melodies, arpeggios, scales and octaves.

My teacher said, when he gave me the piece: "Technically not too difficult, but challenging to play it really beautiful"....

Alcazar De Segovia and Manzanares del Real from Torroba's Castles of Spain; The last movement "Muneira" from Mompou's Suite Compostelana all come to my mind as some of my favorites.
