In case it hasn't been mentioned, I just finished learning Torija and just love playing this piece.

Julia Florida fits this bill for me although I personally wouldn't have said that it's particularly a simple piece. Birds Flew Over The Spire by Gary Ryan is both gentle and fairly simple and although beautiful is obviously subjective it's definitely worthy of consideration here. It's often played too fast (in my opinion) but can be made very expressive at a slower pace and with the right touch.

Satie Gymnopedie #1 fits the bill and arrangements are not hard to find. His Gnossiennes are also good; #1 is easy to transcribe.

This fellows youtube is gentle and beautiful. I will be ordering the songbook he plays from - Maestro Jose Valdez. Not so much for the spiritual/religious, but for the spiritual/music feel to share with an audience. Its calming, and does not need words. The guitars spirit :P
