I have just finished breakfast. I simmered some chopped onion, bell pepper, mushroom, tomato and basil in a little olive oil. I stirred it once. Then when it was about half cooked, I cracked two eggs on top of it and sprinkled plenty of feta cheese on the eggs. I don't stir it again....just let the eggs cook on top of the veggies until the cheese begins to "relax." It will all slide easily out of the skillet. I had one slice of buttered rye toast and a strong cup of Sumatran coffee with it. It was a very good breakfast!
