Roasted a squash yesterday and afterwards added it to a tomato-based sauce which had garlic, a little courgette (zucchini?), peas, tandoori, paprika, cloves and tumeric spices with coconut butter as the oil.
Shared it with my 19 month old who also had pasta shapes to keep him amused!
And this morning, I finished off the left-over squash that didn't go into the sauce in an omelette. But, I don't recommend it in an omelette - the combo of squash and egg didn't work as well as when it was in the sauce. Maybe needed a bit more seasoning, herbs and/or spices....
