Dire Straits - Brothers in Arms
Bob Dylan - Highway 61 Revisited
Simon and Garfunkel - Bridge Over Troubled Water
Beatles - Rubber Soul (mostly because of Norwegian Wood)
Billy Joel - The Stranger
Rolling Stones - Let it Bleed
Queen - A Night at the Opera (Love of My Life is one of my favorite songs ever)

First ones I could think of. I like most albums by The Beatles, though. And I like some of George and Paul's solo works, but I haven't ever listened to the entire albums. And of course, there's a few albums by more modern bands I doubt most people here will know/enjoy. It's kinda crappy, but The Strokes' Room on Fire will always have a place in my heart.

Kind of Blue is just something incredible. I never get tired of listening to it. Luckily my wife also likes to listen to it.

They really, really rock.
Actually, side 2 of it is pretty good and the side 1 really sucks. I really like Las Palabras de Amour and Put Out the Fire (its one of the first Brian May solos I ever learned. I was actually playing my home made Brian May replica today :D

How could I forget:-

Jeff Buckley - Grace.

Probably my all-time favourite album - great singing and guitar playing.

Others worthy of consideration to add to my previous list:-

Radiohead - Ok Computer, The Bends
Nine inch nails - the downward spiral
Anita Baker - Rapture
The Young Gods - Only Heaven
