This is a question that is impossible to answer - I could bore everyone rigid and go on for pages.
Where on Earth to start? I'll avoid Bach, Mozart, Beethoven.
Respighi: Pines of Rome (a gloriously evocative piece, finishing with Roman Legions marching down the Appian Way)
Ravel: Piano Concerto for the Left Hand
Shostakovich: Symphony No 5 (to pick one of his symphonies)
Schubert: Piano Sonata in B-flat major, D960 (his last piano sonata - a truly great work)
Stravinsky: Rite of Spring (one of the seminal works of the C20th - even though written over 100 years ago it still has a visceral impact today)
