Excellent! I'm looking forward to Vietnamese pho and a spring roll for lunch, with peanut dipping sauce for the spring roll, lots of bean sprouts, hot sauce and hoisin sauce with basil leaves in the pho. And all the fixin's - beef balls, tripe, tendon, shaved brisket, ooh and chili oil. Yum.

I just made chocolate chip muffins. They are hot from the oven and I haven’t eaten one yet.

A French soft cheese called 'Badoz Vacherin Du Haut', with some Cornish Wafers and a cup of instant coffee. This cheese is new to me. It is almost liquid inside the edible crust, quite mild but very tasty, and wrapped in a strip of spruce bark. It comes in a wooden box, which is just as well or it would have escaped onto the table.
I would recommend it very highly!

Oh, and a home-made mince pie to follow.

I have just finished breakfast. The other day I cooked a big pot of brown rice and chicken....in chicken broth instead of water. This morning I decided to try something new for breakfast. I drizzled olive oil in a frying pan and made a 'patty' of chicken & rice......about three quarters of an inch thick and a little bigger than a saucer...in the center of the pan. I used a wooden spoon to make a slight depression in the center, into which I cracked an egg. I topped the whole thing with shredded cheddar, and let it simmer a few minutes. The cheese had started melting, but I could see that the egg wasn't fully cooked. I flipped it over onto itself like an omelet and turned off the heat. I let it sit while I put my shoes on, and the egg finished cooking. The rice had gotten crispy on the bottom. It was a good way to use up some chicken & rice, and it was actually pretty good.

Just finished breakfast. I had buckwheat pancakes and sugar free syrup. I'm diabetic, and don't often eat pancakes.....although I really like them, filled with chunks of apple, pecan, blueberries, raisins, etc. I read that buckwheat was fairly low on the glycemic scale, so I occasionally fulfill my desire for pancakes using buckwheat flower. It may be low on the glycemic index, but, to me, it's also fairly low on the 'good taste index.'

I'm eating a bowl full of golden raisins...surprisingly, it's on the Paleo diet.
